Food
Chef Matthew Silovic has created a contemporary menu for the Carlton Wine Room that is seasonally driven and focused on fresh local ingredients. The menu presents an uncomplicated selection, but its simplicity belies the thoughtful style Matthew brings to the familiar. Each dish is an expression of texture and flavour that is both surprising and satisfying; your attention is drawn to the ingredients, not to the technique used to make them.
Wine & Beverages
The annotated wine list is Jay’s personal guide through the Carlton Wine Room’s ever-evolving cellar. The focus is on Italian grape varietals, both imported and local. There are iconic Australian vintages as well as boutique producers, with a monthly rotation of a wines-by-the-glass category. Two special features of Jay’s wine list are the serving of wines by the glass and 1⁄2 glass and an extensive selection of half-bottles.
Entertaining
There are three areas available for private functions: the Mezzanine, the Cellar and the Tower Room. Each room is a distinct space that will suit different occasions. Up the stairs alongside the main bar is the Mezzanine. Away from the bustle, this room is a large, versatile space with booth and table seating. There is a dedicated bar and serving area and the menu is à la carte. Reservations can be made for the Mezzanine for Thursday to Saturday.
